Pure natural extra virgin olive oil is produced by the cold pressing process thus preserving nutrients, stored in conditions that do not allow the product to spoil. It has strong taste characteristics and aroma of freshly cut olive fruit. It may present a pleasant bitterness and a burning sensation in the esophagus of short duration which is due to oleocanthal, one of the most important phenols with anti-cancer, antioxidant and anti-inflammatory effects.
